Candied grapefruit

If you have not tasted candied grapefruit in your lifetime, then you are indeed missing something very delicious! As a kid, I used to munch candied grapefruit to the content of my heart.

So, it holds a special place in my heart. Even today, the thought of having candied grapefruit makes me delightful. I find candied grapefruit peels fascinating.

Ingredients:

2 grapefruits
Sufficient water to cover peels
1 cup granulated sugar
1 cup superfine granulated sugar

  • Remove peel and cut it into pieces of 1/3-inch-wide strips. Cut it evenly to look good at the time of display.
  • Fill a saucepan with water and drop peel into it. Bring the water to a boil over medium heat. Boil 1 minute and drain. You have to repeat this procedure for 4 times to remove bitterness.
  • In a large saucepan, pour granulated sugar and water and bring it to a boil until sugar is melted. Add peel and boil for about 10 minutes until most of syrup is absorbed.
  • Take out peel and lay it in an oiled rack in a baking pan. Keep it for drying. Toss a few pieces in superfine granulated sugar and serve.
